Track looks excellent. Is a little more expensive then 00 but worth the extra. 4'x3' should work well. The challenge is to come up with a good track plan that will allow some fun operating potential and will fit on the board.
I would be tempted to run a siding to go to the edge of the board and make an engine shed or some feature for it that is removeable, so in the future should you desire, you can remove the building or feature and extend a second board onto it. I've done this on my layout but in a more complex way. While I may not extend for some while (If I do at all), the option is there if I decide to.
