If looking at 0 gauge, bear in mind that only some like the old Lionel items will take sharp curves. Conventional 0 gauge needs wide curves so is not really suitable. I suggested 0-16.5 as it takes sharp curves, though it isn't that big. Still larger then 00. The USA version being 0n30 has larger locos and stock which maybe something worth looking at. G scale is big and very reliable (Stick to the smaller locos and stock) but not sure how sharp they take curves.
You can do it with 00 as it certainly will do it. Will just look small for the distance viewed.
Take a good look at high level layouts on YouTube. There are some stunning examples, some being very clever by using light fittings as rails etc.
Do a little research before you spend.
